
Ponti Balsamic Vinegar of Modena Aged is the well-balanced result of a slow acidification of cooked must with Ponti's finest wine vinegar. It is aged for three long years in oak, chestnut and cherry barriques of 225 litres. The various types of wood, provide different characteristics: oak adds a gentle and vanilla aroma, chestnut the aromatic roughness of tannin and cherry a sweet fruit aroma. The barriques are stored in the "Acetaia" at a natural temperature to take advantage of the seasonal fluctuations, with heat promoting the fermentation and concentration, cold the sedimentation.
